Instant Pot Burrito Wrap

If you’ve been a long time reader, it’s no surprise that my family is a Mexican food lover. Some of our favorites are Enchiladas, Quesadilla, Mexican casserole, Flautas.

I often make Burrito bowl and burrito wraps at home. It’s my go-to recipe for a busy weeknight dinner. And Instant pot made this so easy to make. What if you don’t have Instant Pot and still want to make this One pot Burrito bowl!! Don’t worry I’m sharing recipe both the ways.  These burrito bowls are loaded with beans, rice, veggies, Diced Tomatoes, Cilantro and taco seasoning and tastes scrumptious. This burrito stuffing stays good up to a month in the freezer.

How to wrap a Burrito?

Take a Tortilla – The Bigger the better.

Warm it a little bit

Spread a small amount of filling with sauces and toppings slightly off center

Fold the sides

With the sides folded in, use your thumbs to bring up the bottom of the tortilla.

Bring up the bottom of the tortilla and pull it tightly

Roll the bottom of the tortilla tightly

Keep Rolling

And Burrito wrap is ready!!

Instant Pot Burrito Wrap

Ingredients

  • 2 tablespoon Oil
  • 1 teaspoon Grated or Paste, Garlic
  • ½ cup Chopped Onion
  • 2 cups Chopped Bell peppers/capsicum Any color
  • 1 cup Fresh sweet corn (See Note No. 1)
  • 14 oz. Diced Tomatoes 1 ½ Cup (See note No.2)
  • 1 cup Boiled Black beans (See Note No. 3)
  • 1 cup Rice (See Note No. 4)
  • 1 tablespoon Taco seasoning
  • Salt to taste
  • 1 cup Water

Other Ingredients

  • 14 Tortilla 8 inch
  • Sour cream (skip if you are making it vegan)
  • Salsa
  • Guacamole
  • Cheese (See note No. 5) (skip if you are making it vegan or use vegan cheese)
  • Chopped Lettuce

Instructions

Burrito Bowl In Instant Pot (Dont Forget to watch the Burrito recipe video)

  • Turn on Saute button. Heat oil.
  • Once the oil is hot, add garlic and saute for few seconds.
  • Now add onions, Saute for few seconds.
  • Add bell peppers, corn, black beans, Diced tomatoes, Rice, Taco seasoning, salt, and water. Mix everything well.
  • Turn off the saute mode, close the lid, Press the manual button. Set the time for 4 minutes under high pressure with pressure valve set to sealing.
  • When cooking time is complete, do a quick release of the pressure.
  • When the pressure is fully released, the float valve will drop and the lid will unlock to open. Now it is safe to open the lid.
  • Open and give a gentle and quick stir.
  • Burrito stuffing is ready. You can eat them as is also. Or take them in a bowl, add sour cream, salsa, cheese, lettuce, and guacamole and eat like a burrito bowl.
  • Or stuffed it in Tortilla. Take Spinach tortilla, place the prepared burrito stuffing, some salsa, sour cream, guacamole, cheese, and lettuce. Fold it like a burrito (As shown in the video), wrap it up in Foil, cut it from middle and enjoy!!

Burrito Bowl in Pressure cooker.

  • Turn on the stove. Heat oil in a pressure cooker.
  • Once the oil is hot, add garlic and saute for few seconds.
  • Now add onions, Saute for few seconds.
  • Add bell peppers, corn, black beans, Diced tomatoes, Rice, Taco seasoning, salt, and water. Mix everything well.
  • Close the lid. Take 1 whistle.
  • Let the pressure cooker cools down completely.
  • Open and give a gentle and quick stir.
  • Burrito stuffing is ready. You can eat them as is also. Or take them in a bowl, add sour cream, salsa, cheese, lettuce, and guacamole and eat like a burrito bowl.
  • Or stuffed it in Tortilla. Take Spinach tortilla, place the prepared burrito stuffing, some salsa, sour cream, guacamole, cheese, and lettuce. Fold it like a burrito (As shown in the video), wrap it up in Foil, cut it from middle and enjoy!!

Burrito bowl in Pot

  • Cover a pot with the lid, Cook it for 10 minutes or until rice is tender. Stir occasionally in between.
  • Open and give a gentle and quick stir.
  • Burrito stuffing is ready. You can eat them as is also. Or take them in a bowl, add sour cream, salsa, cheese, lettuce, and guacamole and eat like a burrito bowl.
  • Or stuffed it in Tortilla. Take Spinach tortilla, place the prepared burrito stuffing, some salsa, sour cream, guacamole, cheese, and lettuce. Fold it like a burrito (As shown in the video), wrap it up in Foil, cut it from middle and enjoy!!

Notes

  1. You can use frozen corn or canned corn too.
  2. You may use fresh chopped tomatoes instead of canned diced tomatoes.
  3. Use any type, canned or boiled, of beans/kidney beans (Rajmah).
  4. Wash rice properly. I have used Sona masoori rice. You may use any type of rice. Adjust the water quantity accordingly.
  5. I have used Mexican Cheese. You may use your choice of cheese. Skip this if you are making it vegan.
