To make Corn Guacamole, you need very few ingredients. Roasted corn, onion, avocado, salt, cilantro, Jalapenos, Tomatoes, lemon, and salt.
My favorite added part of this recipe was definitely the Roasted Corn. It gave the dip an added texture, smoky flavor and little bit crunchy. Taking it to a new and scrumptious level.
Is Guac recipe complicated? Nahhh…. Not at all
To make this roasted corn guacamole dip, It took me about 12 minutes to roast the corn and meanwhile I chopped the ingredients and mix it. So overall, It took me not more than 15 minutes.
What is the best way to store Guacamole?
Avocado flash turns brown when exposed to air. But if you want to keep guacamole from turning brown, place hunk of onion on the top of leftover Guacamole and then cover the top of the bowl with plastic wrap. Onion works like a magic. Onion is the best way to keep leftover avocados good.

This would be perfect for the BBQ or gathering. It would give people the wow factor with the fresh ingredients with added corn. Roasted Corn Guacamole
Ingredients
- 2 large Avocado
- ¼ cup Chopped Spring onions
- ¼ cup Chopped Tomato
- ½ tablespoon Lemon juice
- Salt to taste
- ½ tablespoon Chopped Jalapenos (According to your spice level)
- 1 cup sweet Corn kernels
- 1 tablespoon Oil
Instructions
- Preheat oven @400 degree F.
- Take corn kernels onto a baking sheet. Add oil, mix and roast it into the preheated oven for about 12 minutes.
- Let them cool down completely.
- Remove the flesh of the avocados.
- Mash the avocados with the back of a fork.
- Add the other ingredients, corn, onion, tomatoes, jalapenos, salt, lemon juice and incorporate evenly.
- Roasted Corn Guacamole is ready. Serve it with Chips, quesadilla or with any Mexican dish. Enjoy!!
