What is Guacamole?

Guacamole, a dip made from avocados, is originally from Mexico. Guacamole also called Guac is a staple of Mexican Cuisine and can be made with so many variations.

I love classic guacamole, but today, I am sharing Grilled / Roasted corn Guacamole recipe. Sweet corn is so good right now, so why not add it to guacamole? This Guacamole recipe is great because it only contains fresh, nutritious ingredients. This is the best Roasted Corn Guacamole that I have ever had!! Really!!

How to make the best Corn Guacamole? How do you make Homemade Guacamole?

To make Corn Guacamole, you need very few ingredients. Roasted corn, onion, avocado, salt, cilantro, Jalapenos, Tomatoes, lemon, and salt.

My favorite added part of this recipe was definitely the Roasted Corn. It gave the dip an added texture, smoky flavor and little bit crunchy. Taking it to a new and scrumptious level.

Is Guac recipe complicated? Nahhh…. Not at all

To make this roasted corn guacamole dip, It took me about 12 minutes to roast the corn and meanwhile I chopped the ingredients and mix it. So overall, It took me not more than 15 minutes.

What is the best way to store Guacamole?

Avocado flash turns brown when exposed to air. But if you want to keep guacamole from turning brown, place hunk of onion on the top of leftover Guacamole and then cover the top of the bowl with plastic wrap. Onion works like a magic. Onion is the best way to keep leftover avocados good.

What to Eat with Guacamole?

This would be perfect for the BBQ or gathering. It would give people the wow factor with the fresh ingredients with added corn. You cannot just serve Guacamole with chips but also with tacos, burritos, enchiladas, tostadas, and quesadillas. It goes great with any Mexican meal and is the perfect guacamole for summertime.

You can freeze Guacamole too. Make this homemade guacamole, take it into an air-tight container and freeze it immediately. It stays fresh up to 1 month.

Roasted Corn Guacamole

Ingredients

  • 2 large Avocado
  • ¼ cup Chopped Spring onions
  • ¼ cup Chopped Tomato
  • ½ tablespoon Lemon juice
  • Salt to taste
  • ½ tablespoon Chopped Jalapenos (According to your spice level)
  • 1 cup sweet Corn kernels
  • 1 tablespoon Oil

Instructions

  • Preheat oven @400 degree F. 
  • Take corn kernels onto a baking sheet. Add oil, mix and roast it into the preheated oven for about 12 minutes.
  • Let them cool down completely.
  • Remove the flesh of the avocados.
  • Mash the avocados with the back of a fork.
  • Add the other ingredients, corn, onion, tomatoes, jalapenos, salt, lemon juice and incorporate evenly.
  • Roasted Corn Guacamole is ready. Serve it with Chips, quesadilla or with any Mexican dish. Enjoy!!

Notes

Instead of the oven, you can roast corn on stove top too.
You may also add chopped garlic and cilantro for the extra flavors.
If you don't have spring onion, you may use regular onion too.

      I have used frozen. But you may use fresh too.
