Instant Pot Shahi Chhole
It is rich, little-bit sweet, spicy and sour, and its gravy has been enriched with Coconut Milk, Dairy-Free Yogurt, and cashew-raisin paste and basic Indian spices.
I have made this Shahi Chole in Instant Pot. If you don’t have Instant pot, you may make it in a pan too.
I will share both the ways on the recipe card.
This recipe is different from regular Chole. It is so easy and tastes wonderful with Naan, Rice, Roti, and Paratha.

Vegan Instant Pot Shahi Chhole
Ingredients
- 2 cups Boiled chickpea / Chhole
- 10 pieces Raw Cashew
- 1 tablespoon Golden Raisins
- 1 cup Original Coconutmilk
- 2 tablespoon Plain Almond Dairy-Free Yogurt Alternative
- Salt to taste
- ½ tablespoon Chili Powder
- 1 teaspoon Cumin powder
- ½ teaspoon Coriander powder
- 1 teaspoon Garam Masala
- ¼ teaspoon Turmeric powder
- 1 tablespoon Oil
- 1 cup Onion, chopped
- ½ cup Chopped Tomato
- ½ teaspoon Ginger
- 1 teaspoon Garlic
- 1 cup water
Instructions
Shahi Chhole in Instant Pot
- Take Cashew, golden raisins and Silk Original Coconutmilk in a blender jar and crush it well. Keep it aside.
- Turn on your IP (Instant pot) on the saute mode. Heat oil.
- Saute garlic, and ginger for few seconds.
- Now add tomato and onion. Saute for a minute.
- Now add salt and saute for 2 more minutes.
- Add boiled chickpeas and stir well.
- Now add Turmeric powder, Coriander powder, cumin powder, chili powder and garam masala. Mix well.
- Add prepared Cashew - raisin paste. Stir well. Now add Silk Plain Almond Dairy-Free Yogurt Alternative. Mix.
- Add 1 cup of water
- Close the lid. Turn off the Instant Pot. Press the manual button. Set the time for 3 minutes under high pressure with pressure valve set sealing.
- Quick release the pressure. Open the lid and give it a quick stir.
- Instant Pot Shahi Chhole is ready. Serve it hot with Naan, Rice or Roti.
Shahi Chhole In Pan
- Take Cashew, golden raisins and Silk Original Coconutmilk in a blender jar and crush it well. Keep it aside.
- Heat oil in a pan.
- Saute garlic, and ginger for few seconds.
- Now add tomato and onion. Saute for a minute.
- Now add salt and saute for 2 more minutes.
- Add boiled chickpeas and stir well.
- Now add Turmeric powder, Coriander powder, cumin powder, chili powder and garam masala. Mix well.
- Add prepared Cashew - raisin paste. Stir well. Now add Silk Plain Almond Dairy-Free Yogurt Alternative. Mix.
- Add 1 cup of water. Cover it with lid and cook it for 5 to 7 minutes over medium to high heat. Stirring Occasionally. Add more water to adjust the consistency.
- Shahi Chhole is ready.
