What is Bhapa Doi?

Bhapa Doi is a traditional Bengali dessert recipe. It is Eggless dessert. Traditionally, the sweetened yogurt is steamed. Bhapa Doi is Hung curd or Greek Yogurt blended with milk and condensed milk and Baked with a water bath in the oven or steamed on the stove top. It is a must have sweet in the Bengali weddings and special occasions. Today, I made Bhapa Doi in Instant Pot as well as in steamer. Both way it came out so good. No difference at all. It can be flavored with saffron, cardamom, Almond extract, vanilla etc. It can also be given a fruity flavor by adding any fruit reductions. But I kept it simple with only 3 basic Ingredients.

How does Instant Pot Bhapa Doi taste?

This is a light and tasty cheesecake like Dessert. It’s very creamy somewhat like Italian Dessert Pannacotta. It is so luscious and so delightful that you savor the taste and texture long after it’s all gone. This Steamed Yogurt Pudding is smooth, silky and simply melts in our mouth.

Instant Pot Bhapa Doi / Steamed Yogurt Pudding

Instant Pot Bhapa Doi or Steamed Yogurt Pudding is one of the tasty Bengali desserts with thick yogurt as the main ingredient and it can be made quickly.

Ingredients

  • 1 cup Full Fat Greek Yogurt / Hung Curd
  • 400 grams / 14 Oz. Condensed milk
  • 1 cup Whole Milk

Instructions

Bhapa Doi In Instant Pot

  • Take Condensed milk and Hung curd / Greek Yogurt in a big mixing bowl. Mix them well.
  • Now, add milk and whisk well. 
  • Take 3 to 4 ramekins (depending on the size) or any heat-safe pot. Place the yogurt mixture in it. Cover it with foil.
  • In the inner liner of your Instant pot, place 2 cups of water and a trivet. Place the foil Covered Ramekins or any pot.
  • Cover it. Cook on high pressure for 15 minutes and allow the pressure to release naturally.
  • Insert a toothpick into the pudding. It should emerge clean.
  • Let it cools down completely and refrigerate it for at least 1 hour or until well-chilled.

Bhapa Doi in steamer

  • Take Condensed milk and Hung curd / Greek Yogurt in big mixing bowl. Mix the well.
  • Now, add milk and whisk well. 
  • Take 3 to 4 ramekins (depending on the size) or any heat-safe pot. Place the yogurt mixture in it. Cover it with foil.
  • Boil water in a steamer. Place the foil Covered Ramekins or any pot in it. 
  • Cover it. Cook on high flame for about 12 to 15 minutes.
  • Insert a toothpick into the pudding. It should emerge clean.
  • Let it cools down completely and refrigerate it for at least 1 hour or until well-chilled.

Notes

The yogurt/curd must be full-fat and thick. If you're worried about curd is looking too thin, just use a sieve to separate some of the whey before measuring.
The cooking time may vary depending on the size of pot you use. If you are using One pot like cake tin or cheesecake tin, cook it for 20 minutes on high pressure instead of 15 minutes in the Instant Pot. Same with a steamer, cook it for about 20 minutes over high flame.
You can also make this dessert without milk with just 2 ingredients.
If you would like to make like cheesecake, Grease the cake tin with butter, add some crushed graham crackers(Crushed it into the grinder with melted butter), placed it in a greased tin and then add yogurt mixture. And cook it for 20 minutes on high pressure in the Instant Pot.

    Hi there, I learned to love Bhapa Doi on a recent trip to India and tried to make it during the quarantine. I followed the InstaPot recipe and the flavor cake out just right, but the consistency was off. Instead of smooth and velvety the Bhapa Doi was really solid and had a bit of a gritty mouthfeel, like cheap cheesecake. Any thoughts what could have happened? Did it maybe overcook?

      I have used US measuring cups.
      1 cup = 237 mL

      It will not come out like panna cotta. You need to eat from the container only.
