According to Wiki, Chowder, as it is known today, originated as a shipboard dish, and was thickened with the use of hardtack. Chowder was brought to North America with immigrants from England and France and seafarers more than 250 years ago and became popular as a delicious dish, and is now a widely used dish as it is simple to prepare.

Is it possible to make Vegan Corn Chowder?
For Vegan Corn Chowder, simply replace the Half and Half with Full fat coconut milk and either skip the cheese or use Vegan cheese like Daiya Cheddar cheese or Go veggie cheese. Instead of Butter use oil.
Is this Chowder recipe Gluten-free?
This version of corn chowder is not Gluten free. I have added All Purpose Flour. But you can make Gluten free too. Skip the all-purpose flour. Crush ½ cup of Corn with little bit water and add it with All the vegetables.
Is Corn Chowder Supposed to be Thick?
Frankly Speaking, It’s Personal choice. We prefer not too thick not too thin. I like a little bit of soupy consistency. If you like very thick, use only 2 cups of water.
Is it possible to make chowder on the stove top?
Of course, you can make it in a pan or in a regular pressure cooker. I will share all the methods on the recipe card.

I make this Chowder very often. Especially in summer when Fresh corns are available in the market. You can make it with Canned corn or frozen corn too. But fresh corn gives much better taste and texture.

Instant Pot Summer Corn Chowder
Ingredients
- 2 cups Fresh Corn (From 2 fresh corns)
- 1 cup Chopped bell pepper (Have used red and green)
- 1 cup Onion chopped
- 1 teaspoon Grated Garlic
- 1 and ½ cup Chopped Potatoes (I've used red potatoes)
- Salt and pepper to taste
- 2 tablespoon Butter (Use oil for vegan)
- 2 Bay leaves
- 1 cup Half and Half (Use coconut milk for Vegan)
- 1 cup Grated cheese (I have used Pepper jack cheese. Skip or use vegan cheese to make it Vegan)
- 2 tablespoon All Purpose flour
- 3 cups Water
- Cilantro or chives for garnishing
Instructions
Vegetarian Corn Chowder in Instant Pot
- Turn on the saute button. Heat the butter.
- Now add grated garlic and saute for a second.
- Add chopped onion, saute for a minute. Add all-purpose flour, chopped bell peppers, chopped potatoes, and corn. Stir in between.
- Accidently(as seen in the video), I added Half and Half early. Please don't add it at this stage or else it will curdle after cooking (It can be seen in the video).
- Add water, salt, Pepper and bay leaves. Stir well.
- Turn off the saute mode, close the lid, Press the manual button. Set the time for 5 minutes under high pressure with pressure valve set to sealing.
- When cooking time is complete, do a quick release of the pressure.
- When the pressure is fully released, the float valve will drop and the lid will unlock to open. Now it is safe to open the lid.
- Open and give a gentle and quick stir.
- Now add Half and Half and Grated cheese. Mix very well.
- Instant Pot Corn Chowder is ready. Garnish it with chives or cilantro. Enjoy!!
Corn Chowder in a Pot or Dutch oven
- Heat butter in a pot.
- Now add grated garlic and saute for a second.
- Add chopped onion, saute for a minute. Add all-purpose flour, chopped bell peppers, chopped potatoes, and corn. Stir in between.
- Add water, salt, Pepper and bay leaves. Stir well. Cover it and cook it for 15 minutes or until potatoes are tender over medium to high heat.
- Open the lid, stir and add half and half and cheese. Mix well.
- Switch off the flame. Garnish it with cilantro or chives.
Corn chowder in pressure cooker
- Heat butter in a pressure cooker.
- Now add grated garlic and saute for a second.
- Add chopped onion, saute for a minute. Add all-purpose flour, chopped bell peppers, chopped potatoes, and corn. Stir in between.
- Add water, salt, Pepper and bay leaves. Stir well. Cover it and cook it for 2 whistles.
- When pressure cooker cools down, Open the lid, stir and add half and half and cheese. Mix well.
- Garnish it with cilantro or chives. Enjoy!!
