If you love Coconut and Chocolate combination, you are in for a treat today!! 🙂 These easy Egg-less, butter-less and fuss free Almond Joy Cookies are chewy and super easy to put together and are loaded with coconut and chocolate. These are great last minute cookie for any occasion, whether it is unexpected guest, for Christmas gifts or for Diwali sweets.
These easy egg-less cookies take just 5 to 6 ingredients and don’t even require a mixer. No Chilling, No fancy equipment, No Beating, just mix them in a bowl and bake them in the oven, that simple! 🙂 Even kids can make this.
These Almond Joy Cookies are so gooey, chocolaty, and have the perfect amount of coconut and almond crunch. You can make this cookie two ways. One is with flour and another is without flour. I like with little of flour because it holds the shape very well. If you want to make it Gluten free, avoid the flour. Believe me it tastes equally good. I have adapted this recipe from Gonnawantseconds with some changes.

3 ingredients Chocolate cookies
Ingredients
Sweetened Coconut flakes – 14 OZ bag
All purpose flour – ⅔ cup
Salt – ¼ tsp
Chopped almonds – ¾ cup
Chocolate Chips – 1 cup + ½ cup for drizzle
Condensed milk – 1 cup
Whole almond for garnishing

Direction
1. Preheat your oven @350 degree F. Line cookie sheets with parchament paper. and keep it aside.
2. In a big mixing bowl, Take all the ingredients(Except Whole almonds and ½ cup chocolate). Mix them until well combined.
3. Grease your palm. Scoop out a golf size ball of mixture and roll it into a ball shape. Repeat the same process for remaining mixture. The mixture is sticky so please grease your hands frequently.
4. Wet your hands with little bit of water and flatten the balls.
5. Bake them @350 degree F. for 12 to 13 minutes or until edges of the cookies are golden brown in color. Allow them to cool completely.
6. Take the remaining ½ cup chocolate chips in Microwave safe bowl. Microwave for 4o seconds and stir until completely melted.
7. Spoon melted chocolate into a Ziplock bags or piping bags. Slightly Cut off the one corner and drizzle cookie.
8. Top each cookie with one whole almond.
9. Rest it for another 30 minutes. Place these Almond Joy Cookies air-tight container. Stay fresh for up to a week.
