Kobi Tindora No Sambharo

Sambharo is Gujarati word which means stir-fried vegetables. If you are a Gujarati or known someone who is Gujarati chances are that you already know this dish.

It is prepared almost daily in Gujarati households.

Kobi Tindora No Sambharo is a stir fry often made with Tondora / tondli, cabbage, and chilies. This is a warm salad which is often served as a side dish with main meals like Bhakhari, bajri rotla or with Dal rice.

The cabbage and Tindora are slightly stir-fried so the vegetables retain the crunch and crispiness.

Kobi Tindora No Sambharo

I do make many kinds of Sambhara like carrot sambharo, green papaya sambharo, chili sambharo, dudhi skin sambharo, papaya no sambharo etc. Very soon I will share a recipe of different sambhara.

My family love this Kobi Tindora No Sambharo with Dal and rice. I also love this with Bajri Rotla and chaas. 🙂 This Kobi Tindora No Sambharo is a No onion – No Garlic recipe. It hardly takes time to prepare.

How to make Kobi Tindora no Sambharo?

1. Heat oil in a pan. Add mustard seeds, hing and curry leaves. Let the mustard seeds splutter.

2. Add Green chilies, Tindora / tondli, salt, and turmeric. Mix well and cook it for 3 minutes over medium to high heat.

3. Now add Cabbage. Stir well and let it cook for 3 to 4 minutes.

4. That’s it!!! Kobi Tindora No Sambharo / Cabbage Tondli stir fry is ready. Enjoy!!

Ingredients

  • Tindora / tondli chopped lengthwise - 1 ½ cups
  • Chopped cabbage - 2 cups
  • Green chilies chopped - 2 According to your spice level
  • Salt to taste
  • A small pinch of Turmeric
  • Oil - 2 tbsp
  • Curry leaves - 8 to 10
  • Mustard seeds - ½ tsp
  • Pinch of hing

Instructions

  • Heat oil in a pan. Add mustard seeds, hing and curry leaves. Let the mustard seeds splutter.
  • Add Green chilies, Tindora / tondli, salt and turmeric. Mix well and cook it for 3 minutes over medium to high heat.
  • Now add Cabbage. Stir well and let it cook for 3 to 4 minutes.
  • That's it!!! Kobi Tindora No Sambharo / Cabbage Tondli stir fry is ready. Enjoy!!
