This Homemade Ice cream is packed with fresh strawberries. It is a perfect way to enjoy the start of the summer. Why just start of the summer, I would say throughout the summer.

If you are Cheesecake lover, then you will defiantly be in love with this Homemade Strawberry Cheesecake Ice Cream.

It feels like eating cheesecake in frozen form.

It has a uber richness of cheesecake from cream cheese and all the creaminess and smoothness of the ice cream from the Heavy whipping cream.

Seriously homemade ice creams are the best.

Especially this type of Ice creams in which you need very few ingredients and just 10 minutes. Yes, you heard it right, this ice cream requires only 10 minutes. Its no churn ice-cream and made it without ice cream maker machine.

The only flip side is, this requires 6 to 7 hours to set in the freezer. I know sometimes it is a little bit frustrating to wait for this much long especially you’re craving it at the last minute.

Ingredients required to make this Homemade Strawberry Cheesecake Ice Cream are

Heavy whipping cream

Sweetened condensed milk

Regular Cream cheese

Strawberry puree

Graham crackers

That’s all!

This recipe is easy adaptive and can be made with other fruit flavors too. Sub strawberry puree with any type of berries puree or even can take mixed berries puree. Or if you want to make plain cheesecake ice cream, skip the puree.

How to make Homemade strawberry Ice cream?

This recipe requires only 5 steps.

Step – 1 Pre-prep

First, Make sure Cream and condensed milk is cold before starting the recipe.  Place your Heavy Whipping cream and sweetened condensed milk in the fridge overnight.

Take out the cream cheese from the fridge 1 hour before making the ice cream. Cream cheese should be on room temperature.

Take strawberry in a blender and make it into a smooth puree. Keep it aside.

Roughly crush the Graham crackers.

Step – 2 Ice cream Base

Beat the room temperature cream cheese for about a minute with hand beater.

Add cold cream and condensed milk. Beat all 3 ingredients on medium speed until stiff peaks form. This takes around 3 to 5 minutes roughly.

Now you have your ice cream base ready.

Step 3 – Mixing the Crackers and puree

Add in the strawberry puree and crushed crackers in your ice cream base and gently fold them all together. DONT over mix it. Just fold it.

Step 4. Let the ice cream set.

Place the mixture in a large sealable container and freeze at least 6 hours or overnight before eating.

Step 5 – Garnish

Top with graham cracker crumbs and some chopped strawberries before serving, as desired.

Important note for Storing –

Be sure to store this ice cream in a very well sealed container with plastic wrap pressed against the surface to prevent the ice cream from crystallizing.

This ice cream can be stored for up to 2 weeks.

Ingredients

  • 8 oz. - Cream cheese Room temperature
  • 2 cups - Heavy Whipping Cream
  • 14 oz. Sweetened condensed milk
  • ½ cup - Strawberry puree
  • 4 - graham crackers

Instructions

  • First, Make sure Cream and condensed milk is cold before starting the recipe. Place your Heavy Whipping cream and sweetened condensed milk in the fridge overnight.
  • Take out the cream cheese from the Fridge 1 hour before making the ice cream. Cream cheese should be on room temperature.
  • Roughly crush the Graham crackers. Keep it aside
  • Beat the room temperature cream cheese for about a minute with hand beater.
  • Add cold cream and condensed milk. Beat all 3 ingredients on medium speed until stiff peaks form. This takes around 3 to 5 minutes roughly.
  • Now you have your ice cream base ready.
  • Add in the strawberry puree(keep 2 tablespoon aside) and crushed crackers (Keep 1 tablespoon for garnishing) in your ice cream base and gently fold them all together. DONT over mix it. Just fold it.
  • Place the mixture in a large sealable container, add remaining 2 tablespoon strawberry puree and swirl it with the back of the spoon or toothpicks, cover it tightly and freeze at least 6 hours or overnight before eating.
  • Top with graham cracker crumbs and some chopped strawberries before serving, as desired.

Notes

You make this ice cream in individual serving too. Place it in 4 oz mason jars and freeze it. This is a great option for the party.
Be sure to store this ice cream in a very well sealed container with plastic wrap pressed against the surface to prevent the ice cream from crystallizing.
You may use any berries syrup instead of strawberry syrup.
you can skip or use crushed graham crackers as desired.
If you don't want to use any fruit puree, simply omit the puree.
You may also add any flavored of extract in the ice cream base like vanilla, orange, almond, chocolate, etc.
Add some chopped nuts if you like some crunch in your ice cream. This ice cream can be stored for up to 2 weeks.

    Graham crackers are not available in India, what else I can put instead? Also, if I wish to make it in lesser quantity, say in half quantity, shall i take the half quantity of each ingredient?.
