This veg mayo sandwich is a little bit spicy and made with toasted bread, loads of crunchy vegetables, vegan mayo, sriracha sauce, cheese, and dried herbs.
It makes the best breakfast sandwich recipe for a busy morning. This vegetable sandwich is also perfect for a summer picnic or to serve as a finger snack during parties or get-togethers.

Today I am here with one more lip-smacking, creamy and cheesy Mayonnaise Sandwich.
Mayonnaise Sandwich is one of my favorite recipes. Like all the sandwich recipes, this comes out always handy when I am in a jiffy and need to prepare a quick meal for my family.
A good thing about this recipe is – Most of the time I find the necessary ingredients in my refrigerator whenever I think of making a Vegetable Mayo Sandwich. Hence, this doesn’t require Pre-planning.
There are many ways this recipe can be made. I am sharing how I like my sandwich to be made. It is a little bit spicy with sriracha and extra creamy with cheese added to the mixture.
It’s so easy to make, even kids can make it easier.
Just mix a few ingredients, fill it in between two pieces of bread, and grill it, your Mayo Sandwich is ready to relish.
Grilling is optional. Though I prefer it to be a grilled version as far as possible, sometimes we don’t have even time to Grill.
No worries, the outcome is equally tasty! Just prepare Sandwich fillings by mixing all the ingredients and spreading them on the bread.
To make the Grilled Mayonnaise Sandwich, I have used a Panini maker here. But again, this is just one of the ways. You can also toast it either using a Sandwich maker Or Tawa Or in Griller.
This Veg Mayo Sandwich can be served for breakfast, lunch, snack, light dinner, or in a kids lunch box, with some ketchup or your choice of dip.
This vegetarian sandwich recipe can easily be made vegan by using vegan butter and dairy-free cheese.
Ingredients required
- Mayonnaise – I suggest you use the full-fat mayo, for the best taste in this Sandwich.
- Vegetables – I like to make this sandwich with onion, carrot, bell pepper, cabbage and corn, but you can go ahead and add more veggies of your choice. Skip the watery vegetables like lettuce, tomato, and green leafy vegetables. Make sure to finely chop or grate them before using them.
- Bread – You can use any Bread, be it a white Milk Bread, Brown Bread, Multigrain Bread, or even Whole Wheat Bread. I am using 21 whole grain and seeds bread.
- Butter – To toast it nicely and add a little more flavor. You can use olive oil too.
- Seasonings – I have flavored the vegetable mixture with simple seasonings like Italian seasoning, and salt. You can adjust the number of seasonings as per your taste.
- Sriracha Sauce – For the bolder flavor, I have added sriracha. This is completely optional. Skip it if you are making it for kids or don’t prefer spicy food.
- Cheese – I have also added grated cheese to the mayo mixture to make the sandwich creamier. You can completely skip it too. Use your favorite cheese. I am using medium cheddar cheese.
Step by step process
- Mix all sandwich filling ingredients in a big mixing bowl.
- Take a slice of bread, spread 2 to 3 spoonfuls of Mayo-Veggie mixture, cover with another slice of bread and apply some butter on top and the bottom.
- Grill or toast this until golden brown from both sides on a low to medium flame. I used tawa to toast the sandwich. You can also use a Panini maker to toast the sandwich.
- Veg Mayonnaise Sandwich is ready. Serve it with Ketch-up or your choice of dip. Enjoy!!

- You can use any bread, like whole-wheat bread, brown bread or white bread or rye bread, or multi-grain bread. To make it healthy, avoid using white bread.

This sandwich is not soggy as there are no watery vegetables used.
No, this sandwich is not vegan. To make it vegan, use vegan cheese instead of regular cheese and vegan butter instead of regular butter.
You could use greek yogurt, sour cream, cream cheese, pesto sauce, or hummus in place of mayonnaise.
This sandwich tastes great without toasting too. Sometimes, I eat it just like that for my evening snacks.
Yes, you can prepare the mixture a day ahead and toast them an hour earlier.

Ingredients
For Sandwich Filling
- ¾ cup Vegan Mayonnaise
- 1 cup carrots, grated
- 1 cup cabbage, grated
- 1 cup Finely Bell pepper/ Capsicum
- ½ cup onion, finely chopped
- ¼ cup Corn
- 1 teaspoon Italian seasoning
- 1 ½ tablespoon Sriracha sauce
- ½ cup Processed cheese, grated
Othe Ingredients
- 10 slices 21 whole grain and seeds bread You can use any bread of your choice.
- 2 tablespoon Butter
Instructions
- Mix all the sandwich filling ingredients in a big mixing bowl.
- Take a slice of bread, spread 2 to 3 spoonfuls of Mayo-Veggie mixture, cover with another slice of bread and apply some butter on top and the bottom.
- Grill or toast this until golden brown in color from both sides, on a low to medium flame. Repeat the same process with the remaining bread.
- Veggie Mayo Grilled Sandwich is ready. Serve it with Ketch-up or your choice of dip. Enjoy!!
