Dumpling sauce is a condiment that is used to top or dip dumplings. It can be made from various ingredients but typically includes vinegar, soy sauce, chili oil, hot sauce, fresh herbs, and garlic.
The best dumpling sauce should have a balance of savory, tangy, sweet, and spicy flavors that complement and elevate the taste of your dumplings.
This lip-smacking sauce has everything and requires only a handful of ingredients. It has a well-rounded flavor with a hint of tanginess.
It’s also versatile and can be used with scallion pancakes, Korean pancakes, rice paper dumplings, and plain white rice. You can even use the leftover sauce to make noodles.
The best part about this sauce is that it can be refrigerated for up to two weeks, so you can make a large batch and enjoy it whenever you want.
Dumpling Sauce Ingredients

- Garlic adds an aromatic flavor and a much-needed lift to this easy dumpling sauce.
- Scallions: Finely chopped green onion delivers a bright flavor and slight texture to this dipping sauce.
- Soy Sauce: Use tamari for a gluten-free version.
- Gochujang: for the spice kick. You can use sriracha or any hot sauce instead.
- Vinegar: The authentic is Chinese black vinegar. It has a fruity, tangy flavor with a noticeable amount of umami. But I didn’t have it on hand; I used rice vinegar.
- Chili Oil adds a little kick to the dumpling dipping sauce and rich, aromatic flavors. I like to use homemade chili oil. Feel free to use store-bought ones.
- Toasted Sesame Oil: Toasted sesame oil brings a nutty, aromatic flavor. A little goes a long way. You can buy toasted sesame oil online or at your local Asian grocery store.
- Brown Sugar: brown sugar adds a sweet element that balances the soy sauce’s saltiness and the vinegar’s sourness. You can use any other sweeteners of your choice.
- Sesame seeds: for additional nutty flavor and crunch.
- Cilantro: for the fresh, herby flavors.

If you made a big batch and have extra, you can store the leftover dumpling sauce in an airtight container – or sealed glass jar – in the fridge for up to 2 weeks.
If you want to keep the sauce longer, you can freeze the dumpling dipping sauce for up to 6 months in an airtight container. Then, to thaw it, place it in the fridge overnight or on the countertop for 4 to 5 hours.
Put the dumpling in one bowl and the sauce in another dipping bowl. Dip each dumpling into the sauce bowl before you eat. Or spoon the sauce directly over the dumplings. This is my favorite way of eating it.

- ½ teaspoon Toasted sesame seeds
- 1 teaspoon grated garlic
- 2 tablespoon Chopped fresh scallions green onions
- 1 tablespoon coriander
- 2 tablespoon water
