How To Make Ghee Clarified Butter Instant Pot | Homemade Ghee In Instant Pot – Ghee, a staple in every Indian Household with lots of health benefits and is very popular for its high smoke point and Nutty-toasted flavor.
What is Ghee?
Instant Pot Ghee is highly clarified butter that has been simmered and strained to remove all water. It is traditionally used in Indian cooking.
To make Ghee, Butter is heated, melted and removed of all milk solids and impurities. Ghee has a much higher smoke point than regular butter.
Instant Pot Ghee has a longer shelf life than butter and can be stored at room temperature or in the refrigerator.
Because of Its high smoke point, It is ideal for sautéing and frying.
Ghee is a very versatile ingredient and used in many Indian recipes especially in making sweets. It can be used in place of butter or oil to burst of flavor and to get all the good benefits.

strengthens your bones,
promotes healthy weight loss.
Why make Ghee from butter at home?
Ghee can be found at all Indian grocery stores and health shops like whole foods and Trader Joes. You can also purchase it On Amazon or from any major retailers.
But Homemade Ghee is best specially made from grass-fed, organic butter.
Making ghee from unsalted butter is simple, easy and can be done with minimal ingredients and utensils right from your kitchen. On top of that, homemade ghee can help retain its nutrients and is cheaper than the store bought ones.
When I was in India, I used to make ghee traditional way from Makhan (White Butter). But when I came here in the US, I got to know about making ghee from Unsalted butter and I was surprised.
I have tried many different varieties of butter to make ghee. But I loved Irish Kerrygold Butter as it is made from grass-fed cow’s milk and Costco brand Organic Unsalted Butter.
The process of making ghee will be similar to whatever ever brand you use. The difference is in its texture and Aroma. You get the almost same texture and aroma, like our Desi ghee, from Irish Kerrygold Butter.
What are the Benefits of making ghee from butter in Instant Pot? I am making ghee since years, Why I didn’t share the recipe of stovetop version of making ghee yet?
I used to make ghee on the stove top until last year, But I never shared a recipe with you guys. Why?
Because, although stove-top version works fine, I was never able to tell the temperature at which ghee will perfectly cook and what will be the exact time. Its always hard to predict the temperature of stove top because every stove tops setting is different. Also, it’s hard to explain how thick the bottom of your pan should be.
But ever since I got an Instant Pot I have started making ghee in it using saute feature and I loved it.
Making ghee in Instant Pot is a hands-free job, makes the process easy and because of Its consistent heat, it comes out perfect every time in the same time which means a lesser chance of burnt ghee.
Depending on the quantity and temperature of the butter, the total time to make ghee could take from 12 minutes to 30 minutes on normal saute mode.
Here are my experiments with quantity and timings for making Ghee From Butter / Clarified Butter in Instant Pot. (Timing shown here is after removing butter for 3 to 4 hours from fridge/freezer).
1 lb butter – It will take around 12 to 13 minutes, yield around 370 grams ghee.
2 lb butter – It will take about 20 minutes, yields around 700 grams ghee.
4 lb butter – It will take around 30 minutes and yields around 1350 grams of ghee.
Ghee is a staple in my house and I use it in my day-to-day cooking like in Gujarati Dal, Dal Tadka, Palak Paneer etc. Indian sweets are incomplete without Homemade Ghee. 🙂
I have also tried making Ghee from salted Butter. It works fine. You won’t feel salt in your ghee at all. The only things you need to take care of are, Salted butter will foam more when boiling, So keep an eye on it and the milk solids from salted butter will be very salty. So be very careful If you are going to use this in any of the recipes or planning to eat it.
There are few recipes about how to make ghee on the internet shared by lovely bloggers with the slow cooking feature in instant pot and I am sure all work great. I don’t have that much patience to spend hours in a slow cooking method and hence I prefer to make it on Normal saute mode.
How To Make Ghee From unsalted Butter in Instant Pot
Ingredients
- 4 LB / 64 oz - Unsalted Butter Irish Kerrygold or Costco organic or regular unsalted butter
Instructions
- Take out the butter from the fridge or freezer for at least 3 to 4 hours.
- Set the external timer for 28 minutes.
- Turn Instant Pot on saute (normal) mode.
- Add butter.
- Soon butter sticks will start to melt.
- After 15 minutes, the milk solids will begin to separate.
- After 22 minutes, the water will start to evaporate from butter and the milk solids will start to settle at the bottom of the pots.
- In about 28 minutes, turn off your IP. The Butter will continue to cook for few more minutes even if IP is turned off.
- Allow it to cool down. Strain the ghee through a strainer.
- You will see some milk solids in the strainer after straining the ghee. You can use it in making Chapathi/roti or paratha dough or simply add sugar, mix and eat. It tastes amazing.
- Store ghee in a cool dry place or in a refrigerator. It stays fresh for months.

If you don't have instant Pot and want to make it on the stove top, here is the recipe.
Take a heavy bottom pan, add butter. Over medium-high heat, simmer the butter until you notice milk solids on the bottom a light amber color. Turn off the heat. Allow ghee to cook down and strain it.Nutrition

I tried to make ghee from 1lb, cooked it for 13 minutes on sauté (normal) and it turned out very dark, looked like milk solids started to burn. Ghee’s. color looks like the darkest beer. I used unsalted Kerrygold butter. Please advise. Thank you!

Looks like you cooked ghee one or two more minutes. As I mentioned in the notes, if you’re making it for the first time, keep a watchful eye on it. Next time, keep an eye on it after 10 minutes.
Right now, If this ghee doesn’t smell burnt, you are good to use it. Hope this helps.

At step 9 where the ghee needs to be cooled after switching off the IP , do you take it off the IP and keep the container away from heat or do you transfer the contents to a different container to cool before bottling ?

Just take it off and keep the inner pot on the countertop, away from the heat. Once it cools down, transfer it to the bottle. Hope this helps. 🙂
