Navratna Korma

Navratna Korma is a vegetarian korma made with vegetables and either paneer or nuts – or sometimes both.

Navratan means nine gems, and it is common for the recipe to include nine different vegetables, fruits, and nuts.

There are two kinds of Navratna Korma, one is with tomato gravy, which is a little bit spicy and another is with cashew which is a little bit sweet.

These are Punjabi-style mixed vegetables in a mildly spiced, slightly sweet, creamy korma sauce. This is kids friendly recipe because of its sweet taste.

How to make Navratna Korma?

For gravy

1. In a pan, boil cashew, onion and Magajtari bee using 2 cups water. Cook it till this is tender. Blend in a blender and make a smooth paste. Keep it aside.

2. Take another pan, heat oil or butter. Add shah jeera. Let it crackled. Add cashew onion paste. Mix it very well. Let it cook for 5 minutes over medium heat. Stir in between.

3. Add Mixed vegetables, cashew, raisin, garam masala, pineapple, pepper powder, salt, sugar and paneer. Mix it well and let it cook for 10 minutes over medium to low heat.

4. Lastly, add cream and mix very well. Cook it for 5 more minutes.

5. Your Navratna Korma is ready. Serve it with Naan, Rice, Paratha or Roti.

Ingredients

  • For gravy
  • Cashew nut - 1 cup
  • Roughly chopped Onion - 1 ½ cup
  • Magajtari bee(watermelon seed- 2 tbsp
  • Ginger - 1" piece
  • Garlic - 3 cloves
  • Other ingredients
  • Chopped and 80% boiled Mixed Vegetables(Bell Pepper carrots, cauliflower, french beans, mutte- 4 cups
  • Chopped cashew and raisin - ½ cup
  • Paneer cubes - 1 cup
  • Chopped pineapple - 1 cup
  • Salt to taste
  • Suger - 2 tbsp
  • Oil or butter - 2 tbsp
  • Shah jeera - 1 tbsp
  • Garam masala - 1tsp
  • Black pepper powder - 1 tsp
  • Cream - 2 tbsp

Instructions

  • For gravy

  • For Korma
  • Take another pan, heat oil or butter. Add shah jeera. Let it crackled. Add cashew onion paste. Mix it very well. Let it cook for 5 minutes over medium heat. Stir in between.
  • Add Mixed vegetables, cashew, raisin, garam masala, pineapple, pepper powder, salt, sugar and paneer. Mix it well and let it cook for 10 minutes over medium to low heat.
  • Lastly, add cream and mix very well. Cook it for 5 more minutes.
  • Your Navratna Korma is ready. Serve it with Naan, Rice, Paratha or Roti.

Notes

You can take vegetables according to your preference.
This Korma is sweet in taste just like we get it in some Indian restaurant.
