In reply to Arineange Art. That's a good idea to thicken this a bit. I'll add a bit of red lentils next time I make this. I can't have coconut, so I used unsweetened plain soy milk instead.

Easy and quick to make, and it tastes delicious! I used coral lentils instead. Thank you for this recipe 🙂
