Somehow, even though I clicked on all five stars, only one showed in my review. It’s definitely a five-star dish in my view!

I made the stew this morning to have for dinner. I used the cashews but not the oil, since I don’t cook with oil. I sautéed the spices and onion in a dry non-stick, adding a little water along the way to keep things from sticking. I can’t believe it only took three minutes in the Instant Pot! The aroma was so amazing I ended up having some for lunch.

I added one more cardamom pod (I bruised them before heating). My chili powder is pretty bland. I could even spice this stew up some more. And thanks for the picture showing the size of the vegetables. You really do need to chop things big so they don’t disappear in the pressure cooking.
